This delicious healthy salad is hardy enough to eat as an entree for 2, but great as an appetizer for 4-6 as well. High in fibre and protein, low in fats, and just filled with a bunch of fresh veggies with an added sweetness of pineapples.
INGREDIENTS
1 can black beans, drained and rinsed
2 cups corn
1/4 cup pineapple chunks
1/4 cup red onions, sliced thinly
1/4 cup red peppers, diced
1/2 jalapeno pepper, seeded & diced
1 green onion stalk, sliced thinly
2 tbsp red wine vinegar
1/2 lime, juiced
1/2 tsp cumin
2 tbsp honey
salt & pepper to taste
Directions:
- Combine first 7 ingredients in a large bowl.
- Whisk together lime juice, red wine vinegar, honey, cumin and pour over salad. Add salt and pepper to taste and refrigerate for at least an hour to let the salad become cold and for all the flavours to mingle.
